I haven't played this game, but in most games this means they are special gameplay modes that aren't accessible until you've completed the game in 'regular' mode first. If it's a match 3 or time management game, you often have to complete the game to 'expert' level (or whatever standard that game sets) before you can access the 'special' modes.
